Steam (approx. 13 minutes)
Ingredients:
2 eggs
1 large tomato
1 handful of spinach (fresh or frozen)
1 tablespoon fresh herbs (parsley, basil, chives, etc.) In this case we only had fresh thyme
1 small shallot
1 teaspoon coconut oil or other plant oil
1 spring onion
50 g grainy cream cheese
some salt, pepper
Preparation:
Finely chop the tomato, onion, and spring onion. Wash the spinach. Set the cooker to steam and cook for 13 minutes. Add the coconut oil and shallot to the pot and sauté. After 2-3 minutes, add the tomato pieces, spinach, and spring onion and cook for 3-4 minutes. Then stir in the eggs, herbs, and cream cheese and season with salt and pepper. Cook everything thoroughly and serve hot. Enjoy.
