This soup is prepared in the KRC-140 multicooker in less than 25 minutes. When you need something quick and healthy, this soup is perfect for you.
Ingredients
1 can of coconut milk (400 ml)
200 g red lentils
200 ml vegetable stock
1 large red bell pepper
1 pepperoni
1 onion
2-3 stalks of spring onions
1/2 lemon
1 tablespoon oil
1 small piece of ginger
A few sprigs of fresh tarragon, otherwise dried
To taste, add paprika and curry powder, salt and pepper
preparation
Chop the onion, ginger, and chili peppers. Add them to the pot with a tablespoon of oil and set the menu to STEAM for 25 minutes. Sauté for 1-2 minutes. Then add the chopped bell pepper and lentils and sauté for 1-2 minutes. Add the vegetable stock and coconut milk and simmer with the lid on for 15-20 minutes. Season with paprika, curry powder, salt, and pepper. Stir in the lemon juice and puree with an immersion blender. Add a little hot water if needed. Sauté the chopped leeks in your pan and garnish with the fresh tarragon. Enjoy.
