Minestrone in the KRC-140 multicooker. Minestrone is derived from the Italian word for soup, minestra, and is a classic dish. You should definitely try it.

Recipe for a delicious and fresh minestrone for about 8 servings

Ingredients:

Olive oil for frying

3 cloves of garlic

1 vegetable onion

100 g celeriac

2 large carrots

2 large potatoes

100 g fresh green beans

1 medium zucchini

1.5 l vegetable broth

2 medium tomatoes

2 tbsp tomato paste

1 bunch of basil

rind of a piece of Parmesan

85 g pasta

salt and pepper

freshly grated Parmesan cheese for serving

Preparation:

Chop garlic, onion, celery, carrots, potatoes, beans and zucchini.

Heat the oil in the KeMar KRC 140 and select the SOUP cooking function in the menu. The display will automatically show 1:30 hours.

First fry the garlic and onion for 2 minutes.

Then stir in the celery, carrots and potatoes (using the stirring spoon included with the KRC 140) and fry for another 2 minutes.

Then add the beans, stir in and fry for another 2 minutes.

Finally, stir in the zucchini and fry for another 2 minutes.

Then close the lid and cook for about 15 minutes, opening the lid occasionally to stir the vegetables.

In the meantime, dice the tomatoes and finely chop the basil.

After the vegetables have cooked for about 15 minutes, add the stock, diced tomatoes, tomato paste, basil and Parmesan rind, stir in and season with salt and pepper.

Close the lid and simmer for about 1 hour.

About 10 minutes before the end of the cooking time, add the noodles to the soup, stir in and cook.

At the end of the cooking time, taste to see if all ingredients have reached the desired consistency. If necessary, let it cook a little longer.

Remove the Parmesan rind and serve the soup in soup bowls with freshly grated Parmesan.
