Stews are ideal for cold winter days. They're hearty, filling, and warming from the inside out. Stews don't always have to contain meat. Hearty Russian cuisine: Borscht without meat
Borscht is a traditional Russian stew made with beef. In vegetarian cuisine, the meat is simply omitted. Nevertheless, this stew tastes truly hearty. This recipe makes four servings.
These are the ingredients:
- 800 milliliters of vegetable broth
- 400 grams of beetroot, pre-cooked, vacuum-packed
- 400 grams of white cabbage
- 2 large onions
- 200 grams of canned tomatoes
- 2 cloves of garlic
- 400 grams of potatoes
- 60 grams of sour cream
- 2 tablespoons lemon juice
- 10 grams of tomato paste
- 10 grams of butter
- 1 bunch of dill

Peel the onions and dice them coarsely. Peel the garlic and dice them. Trim the cabbage and remove the stem. Cut the cabbage into thin strips. Peel the potatoes and dice them. Heat the butter. Add the onions, garlic, and cabbage and sauté for 4 minutes. Stir in the tomato paste, stock, and canned tomatoes and bring to a boil. Add the paprika and caraway seeds and simmer over medium heat for 20 minutes.
Add potatoes and beetroot to the broth and simmer for another 30 minutes.
Wash and chop the dill. Season the stew with salt and pepper and serve with sour cream and dill.
