Ingredients:
For the steamed dumplings:
260 g spelt flour type 630
75 g unpeeled ground almonds
1 packet of dry yeast
1 pinch of salt
3 tbsp raw cane sugar
175 ml plant milk (e.g. spelt, soy or rice)
1 tbsp rapeseed oil
4 mandarins or clementines
For the sauce:
500 g frozen raspberries
2 tbsp raw cane sugar
Preparation:
Mix the flour, ground almonds, yeast, a pinch of salt, and sugar. Heat the plant-based milk in a saucepan or microwave and then add it to the flour mixture. Add the oil and knead everything into a smooth dough. Cover the dough and let it rest in a warm place for about 30 minutes. In the meantime, peel the mandarins or clementines. After the resting time, knead the dough again and divide it into 4 equal pieces. Flatten it slightly with floured hands, add the mandarin orange, and form into dumplings. Fill the titanium ceramic-coated pot with water approximately up to the 2-liter mark. Place the plastic steamer insert inside and place the stainless steel steamer insert on top. Add the 4 dumplings, close the lid, select 15 minutes in the Steam/Cook menu, and press the start button. Meanwhile, gently heat the raspberries and sugar in a saucepan and bring to a boil briefly. Mix everything well. If you want a smooth sauce, you can also puree it. After cooking, serve the steamed dumplings with the sauce. If you like, you can dust them with powdered sugar and/or cinnamon.
