Ingredients:
6 medium-sized carrots
3 medium-sized potatoes
1 onion
1 garlic clove
1 piece of ginger
Juice of half an orange
approx. 1 l vegetable broth
Coconut milk to taste
1 tsp coconut oil for frying
turmeric
Salt
pepper
Preparation:
Peel the carrots and potatoes and cut into small pieces. Dice the onions and garlic clove. Add 1 teaspoon of coconut oil to the pot and select the Soup menu on the KPC-150. The device will preheat. Then sauté the diced onions and garlic. Then add the carrots and potatoes and sauté them too. Deglaze with 1 liter of vegetable stock and add the piece of ginger. Now close the lid of the device. Make sure that the pressure lever is in the middle. The pressure is now building up in the device. Once the pressure is built up, the time begins to count. The preset time in the Soup menu is 25 minutes. After this time, a beep will sound. Now carefully release the pressure by moving the lever to the right or left. Only when the pressure has completely escaped can the lid be opened. Purée everything with a hand blender. If you like, you can also remove the piece of ginger beforehand. Add the juice of half an orange and a little coconut milk and mix. Then set the appliance to "Soup" again so the soup boils again. Stir frequently to prevent it from burning. Season with salt, pepper, and a little turmeric. Now turn off the appliance and serve. Enjoy!
