Baba Ghanoush - at KSB-200. Baba Ghanoush is an Arabic purée made from eggplant and sesame paste, served as a vegan and vegetarian spread/snack or as a side dish for bread or falafel, for example.
Ingredients for 2 - 4 people:
2 eggplants
4 tbsp olive oil
2-3 tablespoons sesame oil
3 tbsp sesame paste (tahini) - we make this ourselves
2 tbsp fresh or frozen parsley
2 cloves of garlic
Juice of half a lemon
Pepper and salt for seasoning
Preparation:
Bake the two eggplants in the oven at 200°C (fan oven) for about 30 minutes. Let them cool. In the meantime, sauté the sesame seeds and finely chopped garlic in a little sesame oil in a pan until the sesame seeds turn light brown. Cut the eggplant lengthwise and scrape out the skin with a tablespoon. Discard the skin. Place all ingredients in a blender and blend using the sauce program. Enjoy.
